WILMINGTON, Del. — When a vegan couple recently moved into Foulk Living senior living community, Food and Beverage Director and Chef, Renee Eaton, saw an opportunity to get creative in the kitchen. Known for her curiosity and dedication to residents’ preferences, Renee was eager to expand the community’s menu to include more plant-based offerings. 

Working alongside Sous Chef Gary Boyer, Renee began experimenting with vibrant, flavorful vegan dishes, many of which are inspired by Indian cuisine. From aromatic curries to colorful vegetable medleys, her new recipes have become a hit among residents, regardless of their dietary choices. 

“Renee is always trying something new,” said Leslie Johnson, Executive Director of Foulk Living. “She takes pride in creating dishes that make everyone feel cared for.” 

The chefs recently introduced a vegan dinner entrée as a healthy alternative option, and it has been met with enthusiastic reviews. In fact, residents have enjoyed the meals so much that they have begun requesting vegan options at lunch as well.
